Why the ingredient matters
Grams are a weight and tablespoons are a volume, so the bridge between them is density. A heavy ingredient fits more grams into each spoon, while a light one fits fewer, which means the same weight fills a different number of spoons depending on what it is.
A tablespoon of water weighs about 15 grams, so 30 grams of water is roughly 2 tablespoons. A tablespoon of a lighter ingredient like flour weighs less, so 30 grams of flour fills more than 2 tablespoons. That is why the tool asks for the ingredient. Flour, as always, is the least consistent, so treat its result as a guide.
How the conversion works
The tool first turns your weight into a volume by dividing by the density, then turns that volume into spoons by dividing by the size of one spoon. Put together:
tablespoons = (grams ÷ density) ÷ millilitres per tablespoon
A US tablespoon is about 14.8 millilitres. So 30 grams of water becomes 30 millilitres, then 30 ÷ 14.8, which is about 2 tablespoons. Remember that 3 teaspoons make 1 tablespoon if you switch the spoon type.
