The most quoted number in dieting

Three thousand five hundred. If you have ever tried to lose weight, you have met this number. It is on the posters in the gym, in the diet books, in the apps, and in more than one respected medical textbook. A pound of fat is 3,500 calories. Cut 500 a day, lose a pound a week. It is so widely repeated that it has the feel of a physical constant, something measured to four decimal places in a laboratory somewhere and true for everyone.

This tool divides by it, so you deserve to know where it came from. The answer is a genuinely good story, and it is not the one you would expect.

It began with one piece of human fat, in 1911

In 1911, a German researcher named Bozenrad published a paper in a Berlin medical archive with the deeply unglamorous title of "On the water content of human adipose tissue under various conditions". He had taken human fat tissue and worked out what it was made of. His answer: about 87 percent lipid, and about 13 percent water.

That is the seed of the whole thing. Every diet plan built on 3,500 calories traces back, through a chain of citations a century long, to that measurement.

And here is the part that ought to give everyone pause. Bozenrad analysed a single sample. One. The most repeated number in the entire weight-loss industry rests, at the very bottom of the stack, on one piece of human fat measured by one man before the First World War.

What Wishnofsky actually said

The measurement sat quietly for nearly half a century. Then in 1958, an American physician named Max Wishnofsky published a short paper in the American Journal of Clinical Nutrition asking a simple question: what is the calorie equivalent of one pound of body weight gained or lost?

He reached for Bozenrad's figure and did the arithmetic in front of us. A pound is 454 grams. At 87 percent lipid, that is about 395 grams of actual fat. Fat, burned in a bomb calorimeter, gives about 9.5 calories per gram, which puts a pound of fat tissue at roughly 3,750 calories. Round the 9.5 down to the 9 that everyone uses on food labels and you get about 3,555.

Then he did something rather good. He went looking for a second opinion from an entirely different direction. He found a 1930 study by Strang and colleagues in which patients had been kept on a very low calorie diet for 59 days, and worked out from their actual energy deficit and their actual weight loss what a pound had cost them. That number came out at 3,500 calories. Wishnofsky noted that it was in striking agreement with the figure he had calculated from Bozenrad's tissue samples, and settled on 3,500 as his answer.

So the number is not arbitrary. Two roads, one from chemistry and one from actual dieting patients, arrived at roughly the same place. For what it was, it was careful work.

The sentence that got borrowed

Here is where it goes wrong, and it is worth being precise about it, because the error is not Wishnofsky's.

What he calculated was an energy density. How much energy is stored in a pound of fat tissue. That is a fact about a substance, in the same way that a fact about petrol is how much energy is in a litre of it.

What the world took from him was a prediction rule. If a pound is 3,500 calories, then run a 3,500 calorie deficit and a pound will come off. That sentence sounds like it follows. It does not. It quietly assumes that your body is an inert container that will hand over exactly one pound of fat and change nothing else about itself while you do it. Bodies do not behave that way. They get lighter, so they burn less. They slow their resting rate. They lose water and glycogen first and fat later. None of that was in Wishnofsky's paper, because he was not making that claim.

The number was fine. The sentence people built on top of it was not. Our Pound to Calories Converter works through what that borrowed sentence actually predicts, and how far off it lands.

Questions people ask

Is 3,500 calories per pound accurate?

As a rough energy density for fat tissue, it is a fair approximation, and it holds up reasonably for modest weight changes in people carrying more body fat. As a rule for predicting how much weight a deficit will remove over months, it is not accurate, and it was never meant to be.

Why not 4,086, since a pound of fat at 9 calories a gram would be that?

Because body fat tissue is not pure fat. It is roughly 87 percent lipid and the rest is largely water, which holds no energy. Take the 13 percent off and you land near 3,500.

Really, one sample?

Bozenrad's 1911 analysis was a single sample, and later reviewers have pointed at exactly that when questioning how much weight the rule should carry. It is a remarkable foundation for a number this famous.

Should I still use it at all?

For converting an amount of energy into an amount of fat tissue, yes, it is a serviceable rule of thumb. For planning a year of weight loss, no.
