The main families of cheese
Cheese makes a lot more sense once you know the rough families, because it lets you place an unfamiliar result. Most cheeses fall into one of these:
- Fresh. Young, soft, and mild, like mozzarella, feta, or ricotta.
- Soft, bloomy-rind. Creamy with a white rind, like brie or camembert.
- Semi-hard. Firm and mellow, like gouda or edam.
- Hard. Aged, firm, and full-flavoured, like cheddar, parmesan, or pecorino.
- Blue. Veined and sharp, like stilton or gorgonzola.
- Washed-rind. The pungent ones with an orange rind and a big smell, for the brave.
When a result comes up, working out which family it belongs to tells you roughly what to expect.
Building a cheese board
A random picker is quietly perfect for putting a board together, because a good board is really about contrast across those families. A few simple rules cover it:
- Span the families. Aim for something soft, something hard, and something blue, and maybe a washed-rind if the crowd is up for it.
- Three to five is plenty. More than that and nobody remembers what they tasted.
- Round it out. Add fruit, crackers or bread, and something sweet like honey or chutney to set the cheeses off.

Narrowing the results

- Starts with. Choose the first letter.
- Contains. Demand a word in the name, like "blue" to fish out the veined ones or "brie" for the soft, bloomy family.
- Ends with. Set the closing letter.
If you narrow it so far that nothing is left, the tool says as much rather than returning an empty box, so you relax a filter and try once more.
