Why mushrooms taste of the fifth flavour
Everyone learns that there are four basic tastes, sweet, sour, salty and bitter. That list is incomplete. There is a fifth basic taste, and mushrooms are one of its richest sources, which is the key to everything about how they taste.
The fifth taste is umami, a word taken from Japanese that means, roughly, a pleasant savoury deliciousness. It is the deep, brothy, mouth-filling savouriness of a rich meat stock, of parmesan cheese, of soy sauce, of a ripe tomato, and yes, of mushrooms. For a long time Western science did not recognise it as a basic taste at all, dismissing it as some blend of the other four, but it is now firmly established as the genuine fifth taste, with its own dedicated receptors on the tongue, sitting alongside sweet, sour, salty and bitter as an equal.
The discovery is a lovely piece of history. In 1908, a Japanese chemist named Kikunae Ikeda was pondering why a simple seaweed broth, the dashi at the heart of Japanese cooking, tasted so deeply savoury and satisfying when it contained no meat. He set out to find the source, brewing down large quantities of kombu seaweed and isolating the compound responsible. It turned out to be glutamate, an amino acid, and Ikeda named the savoury taste it produced umami. He had identified, and given a name to, a basic taste that had been on human tongues forever but never properly recognised.

When you combine two different types of umami substance, the savoury taste is amplified far beyond what either produces alone, and mushrooms are perfectly placed to exploit this.
Here is how it works. After Ikeda found glutamate, later Japanese researchers discovered other umami compounds, a group called nucleotides, with names like inosinate and guanylate. Four names on this list are the same mushroom

The button mushroom, the cremini, the portobello, and the white mushroom you buy in punnets all share the same scientific name, Agaricus bisporus. That is not an error. These are all literally the same species of mushroom, just at different ages and colours, sold under different names as if they were different foods.
The story is delightfully simple once you know it. The plain white button mushroom and the brown cremini are the same mushroom, differing only in colour and a little in maturity, the cremini being a brown-capped strain of the very same species. And the large, flat, meaty portobello, that hearty mushroom people grill like a burger, is nothing more than a cremini that has been allowed to grow up. Leave a cremini to mature, let its cap open out fully and grow large, and it becomes a portobello. Same organism, three names, three prices, sold as three distinct products, separated only by age and marketing.
This is a small masterclass in how food is sold. The mushroom industry realised that the same species at different stages had different textures and appearances, mild and firm when young and white, deeper and meatier when mature and brown, and gave each stage its own appealing name. Portobello in particular is a triumph of marketing, a grand Italian-sounding name reportedly popularised to sell mature mushrooms that might otherwise have been discarded as overgrown. So the next time you choose between button, cremini and portobello, know that you are choosing between a baby, a teenager and an adult of the exact same mushroom, and the main thing separating them is how long they were left to grow and what the label decided to call them.
It is worth knowing for cooking, too. Because they are the same species at different maturities, they behave predictably, the young white buttons are mild and good raw or lightly cooked, while the mature portobello is meatier, earthier and stands up to grilling and roasting. Cooking them so they are actually good
Mushrooms are easy to cook badly and wonderful when cooked well, and a few principles, several flowing from the umami science above, make all the difference.
Do not crowd the pan. This is the most common mistake and the most important fix. Mushrooms hold a great deal of water, and if you pile them into a crowded pan they release that water, sit in it, and steam into something grey and soggy rather than browning. Give them room in a hot pan, in a single layer if you can, so the water evaporates and they can brown properly, because browning is where deep flavour develops. Cook in batches rather than overcrowding, and the difference is night and day.
Salt at the right time. Salt draws water out of mushrooms, so when you add it matters. Salt too early and you pull the water out before the pan is hot enough to evaporate it, and the mushrooms stew. Many cooks prefer to add salt a little later, once the mushrooms are browning, so they colour first and season after. Experiment, but be aware that early salting is part of why mushrooms sometimes go watery.

Can you eat all of these raw?
No, and it is a common misconception that mushrooms are fine raw just because button mushrooms often are. Many cultivated mushrooms are safe raw in moderation, but a good number of mushrooms, including some on this list, are much better cooked and a few can cause digestive upset or worse when raw, because cooking breaks down certain compounds and toughens others into digestibility. As a general rule, cooking mushrooms is safer and usually tastier, developing their flavour and texture, so unless you know a specific mushroom is fine raw, cook it. When buying wild or unusual types, check whether they need cooking.
Are mushrooms actually nutritious?
Yes, and they are nutritionally unusual in interesting ways. How should I store fresh mushrooms?
